A garden that encourages biodiversity

BEHIND ALL OF OUR DISHES LIES AN IMPORTANT SECRET: OUR GARDEN

A rainbow of different flavors are on offer at Ikanos thanks to the countless ancestral varieties we foster, seldom grown in Quebec.

Ancestral varietals are misfit toys of sorts. They are vegetable cultivars that were discarded either because they did not yield enough, they were difficult to grow or simply had a taste that was improperly utilized.

Offering these local, fresh, organic and eco-responsable vegetables to our guests is a passion project. It allows us to be ambassadors of nature.

Our Hemmingford garden has been in operation for two years and exclusively employs organic practices.

An Ecocert certification

Organic fertilizers (chicken, sheep, cows, blood and bone flour, etc)

Anti-insect nets and other anti-parasite methods are used in lieu of chemical products.

A third of our production is 100% experimental and helps to define next year’s planting scheme. Many factors comprise our varietal selection: productivity and ease of the growing cycle are some but most of all we’re looking for interesting tastes and textures that were otherwise relegated to history.

This year we’re testing:

52 varieties of tomatoes

36 varieties of melons

26 varieties of zucchini

33 varieties of cucumber
